Timon Balloo is one of the most influential working chefs today. The now 3 times nominated James Beard Award chef, started as a prep cook and continued his training at Johnson & Wales University. His journey took him through fine dining at Chef Allen’s in Miami, working in Belgium under a French Master Chef, and learning to cook from the heart with his mentor, Michelle Bernstein. Now, he blends his multicultural background with culinary innovation in the “Floribbean style” with restaurants like The Katherine, which perfectly captures the spirit of South Florida, or his former restaurant BALLOO which synthesized all of his influences.

In our conversation we talked about learning before the internet, how he discovered his identity through food, what does Floribbean Cuisine means and the influence of the TV show Yan Can Cook. Thank you, Timon, for joining us on One of Each!
